Chicken Tenders with Spiced Squash

This squash recipe was a favorite of mine and my siblings growing up. Estimated cost: chicken (6.), buttermilk and parmesan cheese (5.), squash (3.) = $14.00

1. Pour two cups of buttermilk over chicken tenders (or cut up chicken breasts) and refrigerate for 30-40 minutes.

2. Preheat oven to 475, and foil and oil two baking sheets.

3. Mix breadcrumbs with parmesan cheese (freshly grated is best), in a 1:1 ratio. Remove the chicken from the buttermilk, and dredge in the crumb mixture. Place on oiled pan.

4. Drizzle homemade salad dressing* over the breaded chicken and bake until cooked through (12-15 minutes).

5. While they bake, prepare the Spiced Squash by slicing one or two pounds of summer (yellow) squash into rounds, about 1/4" thick. Boil them in boiling water on the stovetop for 8-10 minutes (similar to pasta), until tender, and drain well. Mix with butter, salt and pepper and nutmeg to taste.

*homemade dressing: 2/3 vinegar to 1/3 oil, your favorite herbs and spices

Penne with Green Beans, Bread C,M,T

An inexpensive meal; serve with crusty whole wheat bread. Estimated cost: pasta (two boxes)(2.), white cheese sauce (2.), onion (chopped) and green beans (frozen, uncut) (3.), bread (3.) = $10.00

1. Boil and drain pasta, as box directs. Prepare white cheese sauce (my recipe) in a small saucepan.

2. In a frying pan, saute the chopped onion until golden in a small amount of oil. Add or frozen (thawed) full-legnth green beans and garlic; and saute for 30 seconds longer. Stir in white cheese sauce. Add crushed red pepper, salt, pepper and herbs to taste (I use rosemary). Heat through, mix in penne pasta to coat.

American Beef Goulash T,F

Mom's Recipe: Americanized dish based on Hungarian Goulash, serve with whole wheat bread to sop up the sauce with. Estimated cost: pasta, onion and ground beef (6.), sauce and shredded cheese* (4.), whole wheat bread (2.) = $12.00

1. Brown crumbled beef and one thinly sliced onion in a small amount of oil until onions are golden. Add 3c. prepared spaghetti sauce. For a cost friendly sauce, use my spaghetti sauce recipe. Stir in 2 tsp. good quality Hungarian paprika, hot or mild. Simmer ten minutes.

2. Prepare elbow macaroni as package directs. Top pasta with beef sauce and cheese.

*save more by shredding the cheese at home

Cheeseburgers on Whole Wheat Buns, Salad C,T

Monday Meal (serve with a side salad). Estimated cost: ground beef (4.), sliced provolone, swiss or colby cheese and whole wheat buns (4.), salad greens dressed with oil, vinegar, spices and herbs (2.) = $10.00

Mix beef with A.1., shape into patties. Broil until cooked through and no pink remains. Top with cheese, and serve on a bun with ketchup, mustard, and A.1.

Pasta with Zucchini, Salad

Monday Meal (serve with a side salad). Estimated cost: pasta (two boxes), shredded cheese*, and tomato sauce (6.), fresh zucchini squash (2.), salad greens dressed with oil, vinegar, spices and herbs (2.) = $10.00

For a cost friendly sauce, use my spaghetti sauce recipe. I use rotini (corkscrew) pasta; summer squash can be used with or instead of the zucchini.

Prepare pasta according to package directions. Make or heat spaghetti sauce, and add thinly sliced zucchini squash, cook until tender. Serve pasta with 2c. of shredded cheese (such as mozzarella), and a side salad.

Pineapple Chicken, Cauliflower

Sunday BBQ, serve with cauliflower (frozen). Estimated cost: boneless chicken breasts (8.), pineapple rings (canned in juice) (2.), and cauliflower (2.) = $12.00

Drain pineapple rings, and refrigerate, reserving juice. Mix juice with 1/4c. A.1. and enough water to make 1c. of marinade. Marinate chicken breasts for one to four hours, then grill until cooked through. Grill pineapple sliced until lightly browned, serve on chicken.

Beef Brats and Three-Bean Salad

Sunday BBQ, or pan fry, serve with Three-Bean Salad. Estimated cost: beef brats (7.), whole grain buns (3.), and Three-Bean Salad* (3.) = $13.00

Make this Three-Bean Salad ahead of time to allow it to chill well (overnight). Serve with grilled or fried Brats, with mustard.

In a sealable bag, combine one can each of drained cut green beans, drained cut wax beans, and rinsed kidney beans with 1/4c. oil, 2/3c. vinegar and 3 Tbsp. sugar; add herbs as desired (I like basil, oregano or thyme and garlic).

Steaks and Asparagus with Bearnaise Sauce

Sunday BBQ, or broil in the oven, serve with fresh steamed asparagus, and Bearnaise Sauce (make from a packaged envelope). Estimated cost: steaks (10.), asparagus (3.) and sauce mix (2.) = $15.00

Buy when steaks are on sale; often I buy larger cuts and slice them into additional servings. This is a rich meal, so think quality, not quantity. Asparagus is always cheapest around Easter.

While preparing the sauce on the stovetop, grill the steaks until done to your liking. Wet 3-4 paper towels, and wrap the asparagus in them as a bundle. Microwave for 7-10 minutes until tender. Optionally, steam the asparagus in a small amount of water on the stovetop. Pour the sauce over both the steaks and the veggies.
